What is Pure Ghee?
Pure Ghee originated in India where the heat was not conducive to storing butter for long periods.
When the butter was clarified – heated until the water evaporates and the milk solids separate away – they found that the product had a longer shelf life.
It’s more concentrated in fat than butter.
The water and milk solids have been removed. Pure Ghee is a type of clarified butter.

Pure butter fat has a more intense butter flavour and a higher smoke point, meaning it is suitable for using just like regular cooking oil.
You can use pure Ghee instead of regular butter or cooking oil in almost any recipe apart from baking. It can be used as a cooking fat for vegetables and meats at a higher temperature or as a butter substitute for people who are lactose intolerant or where you want a nuttier flavour.
For reasons listed above, commercial pure Ghee is not dairy -free and is definitely not vegan free.
Because the milk solids have been strained out, pure Ghee has a much higher smoking point (465°F) than butter (302°F), and can be stored in a pantry when unopened, just like oil, because it's almost all fat. Both are solid at room temperature and, nutritionally, pure Ghee and butter are almost identical—deriving almost 100% of their calories from fat. But, because pure Ghee is clarified, it contains neither casein (the dominant protein in milk) nor lactose, making it easier for those with lactose intolerance to digest.
How Do I Use Pure Ghee?
In South Asian cooking, pure Ghee is ubiquitous. It's used as a base for tadka, or a mix of spices and herbs bloomed in fat. Pure Ghee is brushed on hot flatbreads, like roti and naan. It's stirred into rice and lentil dishes and drizzled over saag or bharta. Pure Ghee is also often an integral ingredient in South Asian desserts.
Pure Ghee can be a tasty swap for butter or vegetable oil in many recipes, South Asian or otherwise. Cook eggs or pancakes in pure Ghee, or smear it on a slice of sourdough or a bagel. Use it to sauté vegetables and seafood, or to deep-fry fritters. Stir it into oatmeal or brush it over grilled meats.
